chore: 采样/自测产物与一次性探针脚本移出版本库

- 删除已入库的 ecat_after*.csv 与 scripts/ecat_torn_hits.jsonl
- .gitignore 增加 *.csv / *.jsonl / scripts/_*_out.txt 与
  scripts/probe_*.py / selftest_*.py 规则
- 保留 README 引用的回归自测 test_*.py|mjs 与 browser_check_*.mjs
